Ingredients

Crust Ingredients

2 cups Honeylicious Snackers cracker crumbs (1 box mix, premade an crumbled)

1/4 cup all natural sugar substitute (eg - stevia)

1/4 cup coconut oil, melted

Filling Ingredients

1 packages (8 ounces each) low-fat cream cheese, softened

1/4 cups sugar substitute

2 tbsp brown sugar

3 large egg whites, lightly beaten

1 large egg, lightly beaten

2 tbsp cornstarch

2 tsp ground cinnamon

3 2/3 cups chopped carrots, cooked and pureed

2 cup low fat cottage cheese

3 packets Vanilla SmoothZ (Crave It protein Smoothie Mix)

1/4 cup honey or maple syrup

1/2 tsp nutmeg

1/4 tsp allspice

Directions

1In a small bowl, combine crumbs and sugar or sugar substitute; stir in coconut oil (melted) or butter.

2Press onto the bottom and 2 in. up along the sides of a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 6-8 minutes.

3Cool on a wire rack.

4In a large bowl, beat cream cheese, cottage cheese, honey and sugar substitute (for filling)

5Add egg and egg whites; beat on low speed just until combined. Stir in remaining ingredients an blend well (do not over blend)

6Add pureed carrots.Pour into crust.

7Place in a larger baking pan.

8Add 1 in. of hot water to larger pan.

9Bake at 350° for 55-60 minutes until center is just set.

10(May use foil along edges of pan to avoid overcooking). Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Can add Sweet Maple Walnut Crunch Tasty Toppers for a delectable treat!
