Protein packed zucchini bread, lower in sugar. We've added in Crave It chunks of pre-made Date Almond Bar (grain free) for an added touch and burst of sweet and nut. This bread packs over 18 grams of protein per slice, with under 200 calories. It provides an extra boost of veggies and satisfies your sweet tooth.

Ingredients

3 Eggs

1/2 cup Oil

1 cup Sugar

1 tsp Vanilla

2 cups Grated Zucchini Squash

2 cups All-Purpose Flour

2 tsp Baking Soda

1 tsp Baking Powder

1 tsp Ground Cloves

1 tsp Cinnamon

1 cup Crave It! Date and Almond Bar (chopped in pieces)

1 cup Greek Yogurt

3/4 cup favorite all natural sugar substitute or maple sugar

Directions

1In a large bowl, beat the wet ingredients together, except for the zucchini. Add in all your dry ingredients and mix until combined.

2Fold in the shredded zucchini until completely combined.

3Gently fold everything together, and pour into a sprayed 9x 5 loaf pan, or several mini loaf pans.

4Bake in a preheated 350 oven for 45 - 60 minutes, or until a knife or toothpick comes out clean when inserted into the center.

5Remove the bread from the pan(s), and cool on a wire rack.

Recipe tips:

1Make Zucchini Muffins by simply pouring the mixture into paper lined muffin tins.

2It's always a good idea to bake breads like this, or pies, on a parchment lined cookie sheet, just in case they spill over.
